It’s Summer time, the sun is shining and the days feel longer. This means we’ve reinvented our dishes to create the most perfect summer menu for your food fix. We’ve taken some time to chat with our Chef de Cuisine, Ryan Galea and our Pastry Chef, Shawn Zammit to find out about their Summer inspiration, flavours, techniques and what there is to look forward to at The Villa.
Fresh, local ingredients are a must-have at any time of the year but especially in Summer when there are so many delicious ingredients inspiring us to create colourful, flavoursome dishes for our valued guests. Summer colours are incorporated in to our dishes to make them visually appealing, a visual delight and a taste explosion rolled in to one. Whilst always keeping to our Mediterranean roots we like to mix things up a bit and put a twist on all of our dishes to make a completely unforgettable experience, which is something we’re really focusing on this Summer.
Some of our favourite Summer flavours include pollen, apple blossoms, heirloom tomatoes, raw honey and citrus which we are incorporating into our dishes to tantalise your taste buds.
One of our favourite techniques here at Taro is our dry-aged meat preparation. We’re proud to be using one of the oldest techniques to create the most perfect meat with a flavour that cannot be compared. Our wholesale cut, is hung up at a set temperature and time in our refrigerated cabinet, where it is exposed to steady humidity and excellent air quality. We like to let the meat breathe as it matures and reaches its highest possible grade. In time we’ll achieve a refined, unique and intense aroma.
